A Summer Salad

Later today I will be going to a friend's home and so I decided to make a summer salad to bring.

 Here's the recipe.

(Please note: I don't measure often so these are guestimates.)



SALAD


  1. Cut up two nectarines.
  2. Slice four beets.
  3. Mix nectarines and beets and toss in a handful + of goat cheese.
  4. Grill a lot of chicken breasts. (I grilled extra last night when I made dinner). 
  5. Dice it and add it to the nectarines, etc.
  6. Chicken added
  7. Add that mixture to 5 cups of baby greens and 3 cups of arugula. I like the blending of baby greens and arugula, but you could use what ever greens you have handy.




Greens added


DRESSING

A bunch of fresh thyme (about 4 tablespoons) minced
3 teaspoons of local honey
3 teaspoons of honey mustard
6 tablespoons of white wine vinegar
6 tablespoons of warm water
6 tablespoons of olive oil
Salt and pepper ( As you like)

Whisk together.
Because I will be traveling with the salad, I stored the dressing in a glass jar. I'll add as much as needed when I serve the salad.
